Better than Thousand Island Dressing
1 cup almonds, soaked overnight and drained
1 cup distilled water
2 - 3 Tablespoons fresh lemon juice
1 Tablespoon onion powder
1 medium tomato
1/4 sweet onion, minced
¶¶¶ Hold out the minced onion. VITA-MIX all other ingredients together until smooth. Fold in the minced onion.
Fruit & Nutty Dressing
1 cup fresh pineapple chunks
2 fresh peaches, apricots, or apples (or a mixture of all 3!)
1 - 2 bananas
1/4 cup unsweetened, dried coconut or fresh-grated
1/2 cup pecans or walnuts (Whatever type of nut chosen in all these recipes makes a whole, new flavor! HAVE FUN!
3 - 4 dates
¶¶¶ Place all ingredients in the VITA-MIX. Swirl until creamy.
Sunny Citrus Dressing
4 ounces sunflower seeds, soaked overnight and drained
Oranges, lemons, grapefruit, or any acid fruit, peeled
¶¶¶ Using food processor, grind seeds to a meal. Add any of the above fruits and VITA-MIX until creamy.
Mango Tang Dressing
1 ripe mango
1 Tablespoon fresh ginger, minced
1/4 cup fresh apple juice or distilled water
Peel mango, combine with ginger and apple juice in VITA-MIX and swirl until creamy. Add more apple juice or distilled water if thinner dressing is desired. Of course, it is quicker to use distilled water than make the apple juice; but the apple juice -- especially the more tart, sharp granny smith apples -- gives more flavor!
Nature's Garden Dressing
1 small, fresh bunch each of 1 or more of the following: basil leaves, mint leaves, cilantro leaves, and parsley leaves
1 small bunch white, seedless grapes
1/2 cup fresh lime juice
1 small, ripe tomato, diced
1 garlic clove, peeled
¶¶¶ Place all ingredients in the VITA-MIX and swirl until a dressing consistency is reached and swirl to the consistency you want.
Simply Pecan Dressing
3 ounces pecans, soaked overnight and drained
2 - 3 medium ripe tomatoes, quartered
1 - 2 green onions or handful of fresh-chopped chives
1/2 cup fresh celery juice
1 teaspoon chervil or other herb of your choice
¶¶¶ Combine all ingredients in your VITA-MIX and swirl until smooth. Don't forget! Be inventive! This "Pecan Dressing'" can be made into a "Basic Nut-Tomato-Celery Dressing Recipe" by using any nut choice or any combination of 2 nut choices. YUMMY!
Red Sauce
3/4 cup sunflower seeds, soaked overnight and drained
1 & 1/2 cup distilled water (A veggie juice would add flavor.)
1/2 cup chopped red cabbage
1 garlic clove, peeled (Entirely optional, remember!)
1 medium beet, peeled and sliced
1 lemon, juiced (about 1/4 cup)
¶¶¶ Place seeds in a grinder and process until finely ground. Transfer the ground seeds into the VITA-MIX and distilled water, cabbage, garlic, and beets. Swirl until smooth. Add lemon juice and blend again until smooth.
Orange Pop Dressing
2 Tablespoons each: orange juice, lemon juice, water
1/4 cup dates, pitted and chopped
1/2 cup almonds (or choice of nuts), ground to fine meal, soaked overnight and drained and dried
1/2 teaspoon paprika (optional, of course)
1/2 teaspoon ground celery seed
1 cup pineapple juice
1 -2 Tablespoon poppy seeds
¶¶¶ Place all ingredients, except poppy seeds, in the VITA-MIX and swirl. Stir in poppy seeds. Chill before serving. (For crispy poppy seeds, wait until the last minute to stir them into the dressing.)
Better than French Dressing
1 large avocado
1/4 cup fresh lemon juice and 3 Tablespoons distilled water
Date sugar to sweeten, as desired
1 large tomato 4 large tomato slices, dried
1/2 teaspoon onion flakes
¶¶¶ Place all ingredients in the VITA-MIX and swirl. Cover and chill before serving.
