Pumpkin Spice Smoothie
1 T cashews
1 tsp. pumpkin spice
1 frozen banana
Blend all in a heavy duty blender. Serves 1 or 2.
Cauliflower Pâté ("Mock Mashed Potatoes") - from The Live Food Factor
3 cups cauliflower, cut up in small crumbles
1 cup macadamia or pine nuts or cashews, soaked 4-8 hours, rinsed, and
drained
¼ cup lemon juice
¼ cup water
½ Tablespoon garlic
Put all the ingredients into food processor, using the "S" blade, and adding cauliflower a
little at a time.
Blend until the mixture looks light and fluffy like
mashed potatoes.
The mixture will not only look like mashed potatoes,
but the taste will also be reminiscent of mashed potatoes!
Serves 8.
Victoria's Cranberry Relish - better since The Live Food Factor
1½ lbs fresh, raw cranberries
1½ cups raisins
3 peeled oranges, cut in sections
3 diced pears
1 cup chopped pecans
orange zest
Run all the above foods -- EXCEPT HOLD OUT THE CHOPPED PECANS
-- through the food grinder or through the food
processor set for purée.
Mix the relish-in-the-making thoroughly, stir in the pecans, cover with a tight
seal, and let chill.
This recipe is best when chilled overnight to let
the flavors mingle one with the other. It's delicious!
TOP WITH SOME CURLS OF ORANGE ZEST!
It can be served as a smoothie if enough orange juice is added to make
this a beverage.
It can be served as an appetizer with finger-food veggies.
It can be served with the main course as a side dish.
It can be served hours after the Thanksgiving dinner as a dessert set
out on jicama slabs.
The first time I ever had this Cranberry Relish, I had not eaten all day. And I remember thinking:
"THIS IS THE BEST THING I HAVE EVER EATEN!"
Well, waiting til you have genuine hunger can evoke that kind of responce.
There is even a program on the cooking channel now called: "The Best Thing I Ever Ate!"
Holiday Salad - from The Live Food Factor
5 - 6 cups spinach (about ½ lb)
1 cup candied pecan (See recipe below.)
1 cup minced red bell pepper
½ red onion, sliced into halved ringlets
Toss pecans, red bell pepper, and onion ringlets into the spinach.
Top with a very ripe and diced avocado and grapefruit juice mixed together.
Serves 6.
Candied Pecans -- from The Live Food Factor
Pecans
A Little Cinnamon
A Little Raw Honey
Soak the pecans overnight, rinse, and drain.
Roll them in a mixture of
honey and cinnamon.
Dehydrate them for 4 hours or so
until they are dry.
Eat like candy or toss them into a salad or use as a sweet garnish -- or whatever!
Of course, this recipe goes for any nut you want to candy up!
