Because we don't know when we will pass on,
we get to thinking of our days & nights as coming from an inexhaustible well.
Yet everything happens
only a certain number of times.
And a very small number, really.
How many more times will you remember a certain afternoon of your childhood,
some afternoon that's so deeply
a part of your being that you can't
even conceive of your life without it?

perhaps not even that.
How many more times will you watch the full moon rise? Perhaps 20 or 200 or more.
And yet -- it all seems so limitless.

 SWEET WATERMELON JUICE -- ALL WINTER LONG!

    I am sure most of you have a nice, big freezer in your homes. Some of us have just our fridge freezers. But there are 2 options to going out and buying the big, costly freezer: #1 -- you can go out and get a little upright freezer for under $200 that will hold about 120 of the 16 fluid ounce bottles or #2 -- you can get the little chest freezer for about $200 that will hold way, way more. Of course, used freezers are always out there in the want-ads!
     
    ERIC WRITES: "I am thinking of purchasing a chest freezer to preserve my recent order of the 8 bottles of GINGER JOLT! (I use about 2 bottles a year) so that they will maintain their optimal flavor."
     
    MY ANSWER: HOWDY, ERIC! Several other GetWell Friends do freeze their VITTLES MEAL, VEGGIE VOLT! TOMATO BOLT! GINGER JOLT! and INSTEAD OF COFFEE. But it is not necessary. Still, getting a freezer -- especially this time of year with so many great live-foods so inexpensive and in season -- THAT IS A WONDERFUL IDEA!
     
    Back in 1999, I bought a little upright freezer for $100. That was when a life-long farmer friend let his raspberry patch go and did not have pickers come in. I got unlimited picking for 3 years before he plowed it all under! I started each day of each season with going over to pick... TALK ABOUT "EASY PICKIN'S & A FABULOUS BREAKFAST!"  The huge berries hung in huge bunches! I brought home what would have easily sold for about $100 worth  -- every morning! I had so many berries, I actually did not know what to do with them all! Some went for breakfast, some went to the mechanics at The Barn where I lived. But what was the point of using all that Nerve Energy and time to go pick berries and just give them away? High got about a gallon a day! He had red lipstick on all month... Then? He started his wilderness artwork and passed himself off as an Indian pony -- because where he would scratch himself, like horses are always biting their hides at some itching spot, he would also be applying red war paint! HE WAS HILARIOUS! Well, I finally started experimenting with making raspberry juice... had to figure out how to get the rasps out of the raspberries... had to sweeten the unbearable tartness of the thick and ugly puree that came out of The Champion... had to get the right sweetness and thickness for both juices and syrups... then, had to fill my little upright freezer. Would buy 24 bottles of water at a time for $4 and dump the water on some needy greenery and then use the bottles for freezing. That little freezer still runs, real good, to this day! Once I got The Guesthouse, I added a little chest freezer. SO YES! GET ONE! I can't do without mine. You may find yourself filling it with many more wonderful live-foods than your 8 jars of GINGER JOLT!
     
    WATERMELON JUICE-MAKING & FREEZING TIPS:
  • Look for the least pricey watermelons you can find this time of year. Up here, they go for as low as 17 cents a pound.
  • If you do not want the black seeds turning your juice a murky-pink, pick the seeded when they are less pricey.
  • I choose both seeded and seedless. But I only serve the seedless juice to guests at Our Hygiene Homestead in The Woods -- because it is a stunning color compared to murky-pink.
  • I do not pat or pound to pick my watermelons -- I push. If the outer rind does not give to the touch, the chances of the meat being freshest and crunchy inside are best.
  • If I am buying watermelons to eat, I only want crunchy, crispy ones. I do not enjoy mushy watermelons, although some tell me that they do. I can always feed the whole thing to High if it is too mushy! But last week, I bought 5 seedless on sale for $4 each. And they were all firm to the push and, although not yet mushy, that is where they were headed. BUT THEY WERE ALL SOOOOO SWEET! THIS IS YOUR BIG TIP: WHEN THE WATERMELON IS NOT SUCH AN APPEALING TEXTURE BUT IS SOOOO SWEET, THEN JUICE IT AND FREEZE IT IMMEDIATELY! IT WILL MAKE SUPER-SWEET JUICE JUST FOR THE GRABBING AND THAWING IN THE WINTER! Those 5 seedless made well over 2 gallons for us humans -- and all the rinds went for the horse!
  • Something I never got Susan to put into The Live Food Factor: Most of us have heard the raw-food myth that freezing our foods causes them to lose nutrition. And while an estimated 30% may be lost in freezing, we are still getting soooo much nutrition on live-foods that this loss is insignificant! Also, keep in mind that the body can only make so much use of the vitamins and minerals and other micronutrients during any given day. They are not all stored. They are simply eliminated. VITAMIN C is one of these. We get so much more VITAMIN C in our diets than we can use, the rest is passed out of the body. BUT ONE TIP FOR YOU ON MAKING WATERMELON JUICE: IF YOU MAKE AND FREEZE A NOT-SO-SWEET JUICE, IT DOES TASTE TERRIBLE UPON THAWING AND DRINKING! There is an unpleasant taste that I can only attribute to the oxidizing factor inherent in freezing. SO, TAKE IT FROM THE WILDERNESS WOMAN  -- AND SAVE  YOURSELF SOME TIME AND MONEY: IF YOU ARE GOING TO MAKE WATERMELON JUICE, JUST USE THE SWEETEST YOU CAN FIND!
  • Once your watermelon juice is thawed this winter, you can do many things besides serve it straight up or on the rocks: you add a little lemon or lime juice, VITA-MIX the juice with a compatible-yummy-tasting soft food of your choice, or mix it with -- my favorite -- raspberry juice and lime!
